Low Carb Marquez Chili

My Grandma is spanish, and I grew up loving chili. So I created a modified low carb high fat chili that is Parker approved. (Plus, you’ll have leftovers for lunch!)

Ready In:
45 minutes


  • 2 Lbs. of Ground Beef
  • 1 stick of salted butter
  • 1/2 Lb. of extra sharp cheddar cheese
  • sour cream
  • 1 avocado
  • 2 Tbsp. of Red Pepper flakes
  • Salt
  • pepper
  • 2 Tbsp. of Cheyenne Pepper
  • 1 bulb of garlic chopped
  • 1 red onion chopped
  • 1 1/2 jars of diced tomatoes
  • 4 Tbsp. of Cumin Powder
  • 1/4 cup of half and half


  1. Dice onions and garlic
  2. Take 1 stick of butter and melt in large pan at medium heat
  3. Add onions and garlic. Cook on medium heat till browned.
  4. Once browned, mix in ground beef
  5. Stir every few minutes, mixing in spices
  6. Once meat is browned, stir in half and half
  7. After 2 minutes, mix in 1 can of diced tomatoes
  8. Simmer on low heat for 10 minutes – serve with avocado, raw onion, shredded cheddar cheese and sour cream on top.
