Amazing flaxseed cinnamon banana bread – low carb!

 Low carbs, low carbs, low carbs…

I was both shocked and amazed to find out I could not find a cinnamon banana bread that was low carbs. So I decided to experiment and make my own recipe.

The result – amazing!

 

What you need:

3 eggs

4 tablespoons of butter

2 bananas

4 tablespoons of cinnamon

2 1/2 teaspoons of baking powder

1 cup of flaxseed meal

20 drops of liquid stevia

 

Pre-heat oven to 350 degrees

Mix all of the dry ingredients in a big bowl.

In a microwave – melt the butter for 30 seconds or until 1/2 melted 1/2 soft

Crack and mix the eggs into the bowl of melted butter

Break apart the 2 bananas with your fingers into pieces the size of your thumbnail – mix into the eggs + butter

Add 20 drops of liquid stevia into eggs, butter + bananas

Mix all the wet ingredients into the bowl of dry ingredients

Grease a pyrex bread pan and add in all the ingredients

Spread evenly in pan and put in oven for 25-30  minutes depending on pan

 

Allow to cool – cut – enjoy!

(Really good with cookie butter on top!)
