Low Carb Stuffed Chicken

I made this because sometimes you don’t want a salad or ground beef. Parker approved of this recipe and it’s a super cozy meal in my opinion!

Servings:
3 (you can make this for you and a friend or have leftovers)
Ready In:
50 minutes
Ingredients
  • 1/2 (package) spinach
  • 1/2 red onion
  • 3/4 (cup) shredded Gouda cheese
  • 1 (cup) almond meal (make in magic bullet or purchase)
  • 6 (medium) boneless chicken breasts
  • Sour cream

Directions

  1. Pound chicken breasts
  2. Mix spinach with sour cream and Gouda
  3. Place mixture in middle of breast; wrap edges of breast around mixture and secure with toothpick
  4. Roll in almond meal
  5. Bake in lightly greased (with butter) baking dish at 450 for 40 min
