I love the spinach feta wrap at starbucks but it has a ton of carbs! So we modified it!

Ingredients
  1. 2 low carb wraps
  2. 1/4 cup sun dried tomatoes
  3. 1/4 cup of feta
  4. 1/2 cup of thinly sliced spinach
  5. 3 eggs
  6. 1 diced roma tomato
  7. salt
  8. pepper
  9. 2 basil leaves thinly sliced
  10. Butter
Instructions
  1. In a large bowl, beat the 3 eggs
  2. In a buttered frying pan over medium heat, pour in eggs
  3. cook 1 minute, turn, cook 1 additional minute or until lightly browned.
  4. Set aside.
  5. In same fry pan add tomato, spinach, sun dried tomato cook 1 minute, stirring.
  6. Add feta cheese, stir until melted
  7. Add salt, pepper, and basil
  8. Warm tortilla in broiler
  9. Put the eggs on tortilla top with tomato/spinach mixture. Fold in edges.
  10. Serve.
