Ingredients
  1. 4 tablespoons butter
  2. 1 large red onion, diced
  3. 2 cups diced carrots
  4. 2 Lbs. of ground beef
  5. ½ teaspoon sea salt
  6. 1 teaspoon ground black pepper
  7. 1 teaspoon of cumin powder
  8. 1 cup chicken broth
  9. 2 large heads cauliflower, trimmed, chopped and steamed until very soft
  10. 4 Tbsp. of butter
  11. 2 cups of shredded cheddar cheese
Instructions
  1. Heat butter in a very large frying pan
  2. Saute onion for 15 minutes until soft
  3. Add carrots and celery to pan and sauté
  4. Add ground beef to pan and sauté until brown, just a few minutes
  5. Season with salt, pepper, cumin powder and smoked paprika
  6. Add chicken broth and cook down broth until 60% evaporated
  7. Place cauliflower in food processor and puree with butter until smooth
  8. Pour ground beef + veggie mixture into a 9 x 13 inch baking dish
  9. Pour mashed cauliflower over beef mixture
  10. layer shredded cheddar on top of mashed cauliflower
  11. Repeat layering
  12. Bake at 350° for 30 minutes
  13. Serve
